Instructions
Step 1
Soak goji overnight to rehydrate.
Step 2
Heat oil in a medium saucepan and saute the onion & chili until caramelization begins.
Step 3
Add tomatoes, goji berries, and cumin seeds; stir until incorporated.
Step 4
Add stock, bring to the boil, then reduce to simmer.
Step 5
Simmer for 10 minutes.
Step 6
Stir in coriander.
Step 7
Continue stirring until soup is a uniform consistency.
Step 8
Decorate with fresh coriander leaves, cumin seeds, and black pepper (optional: swirl in a teaspoon of coconut cream).
