Step 1
* For marinade, peel and mince garlic and ginger then combine with soy sauce, 1 1/2 tsp. vinegar, oyster sauce, salt, pepper, sugar, chili paste, cilantro. Add chicken breasts, then marinate for 20 min or overnight.
Step 2
• Trim, peel, and grate carrot . Slice cucumber. Roughly chop cilantro. Halve lime. Halve, peel, and thinly slice the onion (use the rest as you like). Then, combine with 1 tsp sugar, 1 1/2 tsp vinegar, lime juice and season with a pinch of salt and pepper. Set aside to pickle.
Step 3
• In a small bowl, combine mayonnaise with Sriracha to taste.
Step 4
• Grill marinaded chicken, 5-7 min each side or until cooked through.
Step 5
• Toast buns, spread with spicy mayo and top with the coleslaw, serve.
