Ingredients

1 ¼ teaspoonsalt
½ teaspoonfreshly ground pepper
2 teaspoonsherbes de provence
1boneless porn lon
trimmed of fat, silver skin and sinew
2 tablespoonsunsalted butter
1 tablespoonvegetable oil
5Golden Delicious apples
cored and cut into 1" wedges

Instructions
Step 1
Preheat oven to 375º
Step 2
Sprinkle 1 teaspoon salt, 1/4 teaspoon pepper and the herbes de Provence all over the pork, and rub in the seasonings so they adhere.
Step 3
In a small, heavy roasting pan over medium-high heat, warm butter and oil. When they begin to sizzle, add the pork and brown, turning occasionally, until well seared on all sides, 6-8 minutes.
Step 4
Remove pan from heat, transfer pork to a plate and spread the apples in one layer in the roasting pan. Sprinkle sugar and remaining 1/4 teaspoon salt and pepper over the apples. Place pork on the bed of apples. Transfer to oven and roast, basting occasionally with the juices. Transfer to oven and roast, basting occasionally with the juices.
Step 5
After 50 minutes, begin checking for doneness; an instant-read thermometer inserted into the thickest part of the meat should register 150ºF.
Step 6
Remove the pork from the oven and let rest 10 minutes before carving. Slice the pork crosswise into thin slices, and serve with apples and pan juices.
