A great soup for a cold day. Crumbled tortilla chips are a great mix in rather than crackers! Sour cream and cheese are also great toppers.

Instructions
Step 1
Dice onion. If you would like your onions softened, sautéed them in a skillet over medium heat until softened.
Step 2
Add all ingredients to crock pot, stirring until mixed together.
Step 3
Cook on low heat 5-6 hrs, or high heat 3-4 hrs. If you prefer, you can cook on stovetop in a large saucepan, bringing to a boil, then simmering for 20-30 minutes.
