Ingredients

1ham bone
with some meat still on it
2 cupsham
diced leftover
2 x 15 ozcans beans
drained & rinsed, navy, great northern, or cannellini
1 x 15 ozcan corn
drained, optional
1 x 15 ozcan diced tomatoes
optional
1cans mixed vegetables
carrots, green beans, peas, etc
1 x 15 ozcan potatoes
drained and cut into chunks
1onion
medium, diced
2 clovesgarlic
minced
2 handfulsfresh spinach
roughly chopped
1 tspsmoked paprika
½ tspblack pepper
½ tspdried thyme
4 cupschicken stock
or vegetable, enough to cover
apple cider vinegar
Optional, or lemon juice to brighten flavors
Instructions
Step 1
Optional aromatics boost: In a skillet, sauté onion and garlic until soft to deepen flavor.
Step 2
2. Combine in slow cooker: Add ham bone, diced ham, sautéed onion/garlic, beans, corn, tomatoes, canned mixed vegetables, smoked paprika, thyme, and black pepper.

3. Add stock: Pour over ingredients until mostly covered.

• Slow cooker: High for 2–3 hours

• Stovetop: Simmer over medium-low for 2–3 hours
Step 7
5. Add potatoes: About 30–45 minutes before the end of cooking, gently fold in canned potatoes so they heat through without breaking apart.

6. Add spinach: In the last 5–10 minutes, stir in fresh spinach until just wilted.
Step 9
7. Finish: Remove ham bone, pick off any remaining meat, return meat to the soup. Taste and adjust seasoning. Add a splash of apple cider vinegar or lemon juice if desired.

8. Serve: Hot, with warm sweet cornbread for dipping.
