Prep
Step 1
Finely chop garlic, most of the anchovies and most of the capers.
Step 2
Slice olives in half and remaining anchovies coarsely
Step 3
Start less than normal amount of water boiling for pasta.
Sauce
Step 4
Add 4 Tbs olive oil to pan on medium heat. Add garlic and finely chopped anchovies. Stir for a minute-ish until starts to golden.
Step 5
Add chopped capers, chilli flakes and olives to pan and mix up. Add whole Peeled tomatoes and let simmer.
Pasta
Step 6
Salt and boil pasta for just under recommended time. Save a couple Tbs of pasta water before draining.
Step 7
Add pasta, parmesan, chopped parsley, coarse anchovies and remaining capers to sauce, stir. Use pasta water to thicken if needed.
Step 8
Serve with extra parsley and parmesan, salt and pepper etc.
