Chef Norman's Bitter Melon and Glass Noodles in Coconut Gravy

There are many great health benefits of bitter melon, which is also known as bitter gourd. To name a few, it helps with diabetes, heart health, cancer, skin problems and also in weight loss. The fruit can be easily found at the Asian shops and easily spotted for its rough and bumpy skin. My late mum cooked this dish a lot for my family and sometimes she wok-fried it with turmeric and chilli. I honestly did not like it when I was little due to its bitterness but now it became one of my favourite vegetables to cook. To remove its bitterness, cut the melon into 2cm thick pieces and soak them in water seasoned with salt. Give a good rinse before cooking.

Instructions
Step 1
In a medium saucepan stir in the shallot, garlic, coconut milk and salt together with 200ml of water. Cook on a high heat to a boiling point then lower the heat to low and add the melons.
Step 2
Give a good stir and cook for 15 minutes or until soft and wilted, stirring once or twice.
Step 3
Next stir in the glass noodles and cook for 1 minute. Turn off the heat and serve with jasmine rice.
