Instructions

Step 1
In a little bowl, mix egg yolks with grated Parmigiano cheese and a pinch of black pepper. Set aside.
Step 2
Remove skin from your sausages and break the meat with your hands.
Step 3
In a pan over medium low heat, add some olive oil and your sausages. Cook for about 5 mins or until nice and brown, stirring occasionally.
Step 4
Add chilli paste (or nduja), half a ladle of pasta water and simmer for a couple of minutes.
Step 5
In the meantime, boil your pasta until al dente, drain and add it to your sauce.
Step 6
Toss well over the heat to combine all the flavours together.
Step 7
Turn the heat off, add your egg and cheese mix and stir vigorously until it melts, adding a drop of pasta water if necessary.
Step 8
Serve with some grated Parmigiano on top.
