Instructions

Step 1
In a pan over medium heat, sizzle your guanciale lardons for about 4/5 mins or until nice and crispy, then set aside.
Step 2
In a bowl, mix egg yolks with grated cheese, pepper and 1 tablespoon of the greasy juices of your bacon.
Step 3
In the meantime, boil your spaghetti in some salted water until al dente (take them out 2 mins before their cooking time).
Step 4
Add your boiled spaghetti in the greasy pan and toss well over the heat to combine all the flavours together.
Step 5
Turn the heat off then add your egg and cheese cream along with some pasta water.
Step 6
Mix for a couple of mins or until nice and creamy!
Step 7
Finally add your crispy guanciale lardons and serve with a sprinkle of ground pepper to make it sexy.
