Instructions

Step 1
In a blender add 1 chopped onions, garlic, Rosemary, anise, green onions, olive oil. Blend together into a purée then transfer in a bowl
Step 2
Blend all 6 tomatoes with 1 chopped onion together then transfer into a bowl
Step 3
On medium high heat, place saucepan on and pour in your vegetable oil. Allow to heat up then add in green purée.
Step 4
Allow that to fry for 5-8mins then add in your tomato purée. Reduce heat to medium high and Mix that completely and allow to fry for another 10mins
Step 5
Now add in blended tomatoes, mix and add salt, cube and curry powder. allow to cook for 10-15mins. Stir occasionally
Step 6
Wash rice to remove starch and pour into your mix. Bring the heat up to medium high and add in 2 cups of water. Stir and bring it up to a boil
Step 7
At this stage reduce heat to medium low or low and keep stirring occasionally to allow equal distribution of heat and water.
Step 8
When water is about 80% gone, cover with parchment paper or aluminum foil. This is to trap heat in to finish up the cooking process
Step 9
Serve with any protein and sauce of choice
