Jollof Rice, my new favorite rice dish

This is Nigerian-inspired Jollof rice. This recipe is not authentic by the way, but it's one of my favorite rice dishes ever.

Instructions

Make the sauce

Step 1
Combine all the ingredients for the sauce in a blender and blend them. Duh. Set aside until use.

Prep the spice mix

Step 2
Mix all the spices together and get it ready for use. It's easier to do it this way.

Cook

Step 3
To a medium heat Dutch oven, add your oil and your chopped red onion. Cook until fragrant.
Step 4
Add your spice mix, as well as some salt, the maggi cube and some bayleaves. Toast the spices for a few seconds.
Step 5
Add the tomato paste and cook with the spices for 1 minute.
Step 6
Add the tomato sauce we just made. Simmer for 15 minutes on low heat, covered with a lid. Give it a stir from time to time.
Step 7
Add your rice. Stir in with the sauce. Add water just enough to cover the rice. Cover with a lid and let cook on low heat for 25 minutes.
Step 8
Fluff the rice using a fork once it's done, and it's ready to serve. You can eat it solo or with some chicken or fried plantain.
