Instructions

Step 1
Peel and cube the butternut squash
Step 2
In large sauce pan or stock pot sautee onions celery and carrots with butter until onions are clear and starting to brown.
Step 3
Add in water broth and cubed butternut squash. Bring to boil.
Step 4
Add in thyme. Continue boiling until squash is very soft.
Step 5
By using batches, or an immersion blender, blend until whole pot is smooth.
Step 6
Add in canned pumpkin. Add salt to taste and stir until smooth and well mixed.
Step 7
If desired stir in cream.
