Creamy and Healthy Blended Vegetable Soup

This is the perfect throw in all your veggies going bad in the fridge soup. It is so hearty and delicious and very simple to make. Perfect for winter it will immediately warm up your body and soul ❤️
The recipe below lists all the ingredients I used in this batch but please feel free to add any vegetables you like to it. Also note chopping size does not matter much as everything gets blended together in the end to make a thick creamy stew.

Ingredients
10 servings
2 Tbspolive oil
2 Tbspbutter
1onion
large, peeled diced
2butternut squash
peeled and diced
2zucchinis
diced
2carrots
large, roughly chopped
2potatoes
peeled and diced
1 Tbspras el hanout
or your favorite spice blend
1 tspground ginger
1 tspturmeric
8 cupsstock
of choice
Chilli powder
to taste preference
Salt
to taste preference
Pepper
to taste preference
Raw spinach
to pour soup over
Heavy cream
for garnish
parmesan cheese
for garnish
Instructions
Step 1
In a large pot, sautee the onion in butter and olive oil until they start to brown. This is important to give a caramelized flavor to the soup.
Step 2
Once browned, add the remaining vegetables.
Step 3
Add the spices and stock over the veggies and bring to a boil. Then let it simmer on medium heat for about 20 minutes or until all the vegetables are fork tender.
Step 4
Give the liquid a taste and adjust with salt, pepper and chili powder to your taste preference.
Step 5
Blend the soup with a hand blender until it is uniform and smooth. It should have a thick and creamy consistency.
Step 6
Add raw spinach to a serving bowl and top it with the soup.
Step 7
Garnish with a tablespoon of heavy cream, black pepper and parmesan cheese to your taste preference.
Step 8
Enjoy the warmth and keep going back to refill that bowl!
