Ingredients

1 lbred kidney beans

2onions
diced

3celery ribs
diced

1green bell pepper
diced

1 Tbspgranulated garlic

1bay leaf

1 lbCajun sausage
sliced 1/2 inch thick

1 poundsmoked sausage
optional
1 lbsmoked pork bones
or turkey bones, optional but recommended

2 tspHot sauce

3green onions
chopped

2 Tbspcooking oil

½ Tbspworcestershire sauce
Instructions
Step 1
Heat the oil in a pan, add the sausage and brown them. Add the onions, celery, bell pepper, and bay leaf. Sauté until it's light brown.
Step 2
Add the ingredients from the pan in the slow cooker with the rest of the ingredients
Step 3
Add enough water to the slow cooker (6 or more cups if needed)
Step 4
Cook for 7-8 hours on Low setting (or until beans are fully cooked)
Step 5
(Optional) Add the Worcestershire sauce while it cooks
Step 6
When there are about 30 minutes remaining, gather 1 cup of the cooked beans and mash them, then add them back to the slow cooker and cook for the remaining time.
Step 7
Add green onions for garnish and serve with white rice
