8egg whites
1 cup liquid egg whites
300gsweet potato
shredded, raw
1chicken sausage
chopped
1 cupspinach
chopped
50gyellow onions
chopped
50gred bell peppers
chopped
½ cupmushrooms
chopped
garlic powder
onion powder

Instructions
Step 1
Preheat oven to 375 degrees

Step 2
Beat the eggs and egg whites together in a large bowl; set aside.
Step 3
Add the chopped sausage, veggies and seasonings to a large bowl and stir until well combined.
Step 4
Grease a muffin tin. Scoop about 1⁄3 cup of the veggie mixture into each muffin cup. Add 3 Tbs. of the egg mixture to each cup over the veggies. Bake for 30-35 minutes.
Step 5
When ready to eat, top with salsa.
