Instructions

Step 1
Preheat oven to 400

Use a shredder or food processor to shred your sweet potato. Salt and let it sit for 15 minutes.

Put your sweet potato in a cheese cloth or thin towel and squeeze out all the liquid

In a medium bowl, add your sweet potatoes and mix with olive oil and salt

Oil a muffin tin and add sweet potatoes into each space. Use your hands to compress the sweet potato into the shape of the tin, pressing it in so that it holds

Bake for 20 minutes
Step 7
In a medium sized bowl, mix together your eggs. Chop your veggies and add them in. Add salt and pepper
Step 8
Use a ladle to spoon the egg mixture into each quiche
Step 9
Bake for another 15 minutes
Step 10
Remove from muffin tin once ready to prevent the crust from getting soggy! The quiches can be left in the refrigerator for 3 days as future breakfasts :)
