Ingredients

1 Tbspolive oil
1.5 poundschicken thighs
salt
to taste
3cloves garlic
minced
1red bell pepper
diced
1onion
diced
3 Tbspred curry paste
1 Tbspginger
6 cupschicken broth
1can coconut milk
1 Tbspfish sauce
2 TBSPBrown Sugar Substitute
3green onions
sliced
0.5 CupCilantro
Chopped
¼ cupbasil leaves
chopped
2 Tbsplime juice
1 packageshirataki noodle
Instructions
Step 1
Heat olive oil in a large stockpot or Dutch oven over medium heat. Season chicken with salt and pepper, to taste. Add chicken to the stockpot and cook until golden, about 2-3 minutes; set aside.
Step 2
Add garlic, bell pepper and onion. Cook, stirring occasionally, until tender, about 3-4 minutes.
Step 3
Stir in red curry paste and ginger.
Step 4
Stir in chicken broth scraping any browned bits from the bottom of the pot. Followed by adding in your coconut milk.
Step 5
Stir in chicken. Bring to a boil; reduce heat and cook, stirring occasionally, until reduced, about 10 minutes.
Step 6
Boil Shiritaki noodles and drain before adding to soup. Boil noodles for about 8-10 minutes.
Step 7
Stir in fish sauce and brown sugar substitute.
Step 8
Add noodles to soup.
Step 9
Remove from heat; stir in green onions, cilantro, basil and lime juice; season with salt and pepper, to taste.
Step 10
Keep some lime wedges and cilantro for garnish and enjoy!
