Instructions

Step 1
Cut up potatoes, bell pepper, onion, corn, and garlic

Step 2
Heat up skillet with olive oil and butter (or you can use a pan if you don’t have one)

Add your potatoes, bell peppers, onions, and corn (wait to add garlic) and cook until the potatoes are soft

Season with salt , pepper, paprika, garlic powder, red chili flakes, and add garlic

Once garlic is fragrant, add sausage to skillet and cook until it browns.

Add spinach

Once spinach is cooked down, add 4 eggs on top a couple inches from each other and cook until you see the egg whites turn white (if you don’t like them runny, you can cover for 2 minutes)

Shred Parmesan over eggs and season with salt and pepper
