Instructions
Step 1
Slice one thick brioche slice. Then cut in half without fully cutting through.
Step 2
Melt 2 tbsp butter. Spread both sides of the brioche with the melted butter.
Step 3
Roast the brioche in a pan until golden brown.
Step 4
Meanwhile crack the eggs into a bowl. Season with salt and pepper and whisk.
Step 5
Heat 1 tbsp of butter in a pan. Leave the heat on medium and add the eggs. Stir the eggs until they start to stock. Fry for about 2-3min they should be creamy.
Step 6
Fry the bacon until crispy and golden brown.
Step 7
Chop the chives.
Step 8
Spread the inner part of the brioche with 2 tbsp sriracha mayo.
Step 9
Place a cheese slice on each side.
Step 10
Top the middle part wirkt the bacon and eggs.
Step 11
Sprinkle on the chives and drizzle on some sriracha mayo. Enjoy!
