Roasted Cauliflower Toastie with Pink Sauce & Balsamic Grapes

Instructions

Balsamic Grapes

Step 1
Preheat oven to 200 degrees C

Combine grapes, olive oil, chopped thyme and oregano together and put on a baking sheet
Step 3
Bake until grapes wrinkle and split, about 25 mins
Step 4
Drizzle with balsamic vinegar and season with salt and pepper

Pink Sauce

Step 5
Place tahini and garlic in a food processor. With it running, add water in a slow stream and process for about a minute until the tahini is light and fluffy

Add lemon juice and salt and process for 30 more seconds
Step 7
Add the beets to the basic tahini sauce to convert it into pink sauce

Cauliflower

Step 8
Whilst the grapes are being prepared, add the small cauliflower florets to another baking sheet and toss in oil and spices (mix spices before coating to make it even)

Bake for 25 mins

Bringing it all together

Step 10
Load up some bread with the pink sauce, cauliflower, balsamic grapes and some vegan cheeze if wanted

Grill or cook in a toastie maker
