Instructions

Step 1
Heat 2 teaspoons oil in 4 quart stockpot over medium heat until hot. Add onion, 1 tbsp garlic and thyme; cook and stir 3 to 5 minutes until onion is tender.
Step 2
Add broth, water. carrots, mushrooms, bell pepper and barley; bring to a boil
Step 3
Reduce heat; cover and simmer 10 minutes or until barley and vegetables are tender
Step 4
Cube beef and toss with remaining garlic
Step 5
Heat 1 tsp oil in large nonstick skillet over medium-high heat until hot. Add half of beef, stir fry 3 to 4 minutes until medium-rare to medium. Remove from skillet and repeat with remaining beef.
Step 6
Add frozen peas to broth mixture. Cook, uncovered, 2 minutes or until tender.
Step 7
Season salt to taste
