Ingredients
6 servings
2 poundsbeef stew meat
grass-fed, organic
1onion
small, chopped
3carrots
cut into thick slices
3celery stalks
cut into 2-inch pieces
2rutabagas
medium, peeled and cut into chunks
2garlic cloves
crushed
1 teaspoondried thyme
½ teaspoondried sage
crushed
½ teaspoonfreshly ground black pepper
1 ½ teaspoonsherb salt
1 cuppomegranate juice
pure
2 tablespoonsarrowroot powder
½ cupfresh parsley
chopped
Instructions
Step 1
Combine all the ingredients except the parsley in a 4-quart slow cooker.
Step 2
Cover and cook on high for 3 to 4 hours, or on low for 7 to 8 hours.
Step 3
Taste and adjust the salt and seasonings, if desired.
Step 4
Stir in the parsley. Serve
Step 5
Option: Replace the pomegranate juice with homemade beef stock.
