Instructions

Step 1
Boil lentils for 20 minutes or until done.
Step 2
Dice and cook butternut squash.
Step 3
Dice chorizo, fry and add onions. Fry until browned.
Step 4
Add harissa, tomato puree, tomatoes. Add spinach and cook down. Add cooked lentils.
Step 5
Poach or fry 1 egg each and place on top to serve.
