Instructions
Step 1
Mix first 6 ingredients for 2 minutes with a spatula. Cover with a damp cloth and put in a warm oven (turned on for 30 seconds) for two hours or overnight in the fridge.
Step 2
After proofing, use a spatula to fold the dough over on itself 40 times.
Step 3
Line a 9x13 pan with parchment paper. Drizzle with 2 tbsp olive oil. Sprinkle with about 1 tablespoon of cornmeal, 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp garlic powder and 1/2 tsp oregano. Spread on top and sides of pan. Spread the dough evenly with a wet spatula.
Step 4
Proof in the oven for another 45 minutes.

Preheat oven to 480

Drizzle more olive oil on top and poke the dough with your fingers making small indentations.
Step 7
Sprinkle with salt, rosemary, and water.
Step 8
Bake for 16 to 20 minutes until the top is golden and crunchy.
