Taco Soup w/ Cheese Taquitos

This is such a easy weeknight meal to put together on a warm day the soup is all a one pot dish & it is SOO GOOD. Whoever you are making this for will thank you! Feel free to be creative you don’t have to use beef, you can use ground chicken or even turkey! Be creative make it your own. You can add the taquitos for extra flavor and deliciousness.

Instructions

Step 1
Preheat pot to medium heat and add in diced onions. Allow onions to brown for about 5-6 minutes and then add in beef. (No oil needed beef will make its own)
Step 2
Cook ground beef for about 10-15 mins or until fully brown and then season with taco seasoning packet. Add in diced jalapeños and garlic.
Step 3
Mix beef up and break apart to ensure it’s fully separated & add in beans, drained corn, and rotel. (Only drain the corn juice)
Step 4
Add in better than bouillon, tomato paste, heavy whipping cream, & other seasonings listed-mix thoroughly. (Be sure to season to your liking taste the soup if it needs more add more don’t forget the hot sauce for extra kick) Allow soup to come to a slight boil and then allow it to simmer for about 30-35 mins. & enjoy w/ your favorite toppings!

Cheese Taquitos

Step 5
Preheat your skillet or pan on medium heat and add in canola oil to prepare to fry taquitos
Step 6
Place one cheese string in the middle and tightly roll taquito until you reach the end. Seal with flour water to keep taquito from opening up
Step 7
Fry taquitos for 1-2 mins on each (depending on hot oil is and desired crispiness) once done wipe off excess oil and enjoy!
