Ingredients
2 servings
3 cupsSpring Mix
0.5 lbsahi tuna
cooked to rare in the middle and thinly sliced
½ cupGreen Beans
lightly steamed
½ cupTomatoes
Roasted
2eggs
hard boiled
¼ cupkalamata olives
½ cupFingerling Potatoes
roasted
1 tbpsToasted Sesame Seeds
Citrus Champagne Vinaigrette
Instructions
Step 1
Season fingerling potatoes with salt and pepper. Option to add your selection of herbs and spices. Roast potatoes for 25 min at 425F. Add chopped tomatoes for last 10 minutes of cook.
Step 2
Dry ahi tuna and prep with salt and pepper. Pan fry on medium/high heat for about 45 seconds a side. Let rest in fridge until ready to use
Step 3
Combine all ingredients in a jar or resealable container. Shake vigorously to combine. Store in the refrigerator until ready for use.
Step 4
Steam green beans in pan for 10 minutes
Step 5
When all ingredients have cooled, prep and arrange all ingredients in your salad bowl. Top with sesame seeds and serve.
