Step 1
Saute onions in the oil until translucent, add the sliced roasted peppers, add the mashed eggplants, add the chopped tomatoes, put it on the stove top in a non stick pot for 15 minutes stirring continuously, so everything will homgenize. Move to oven at 350F for another 45 min to 1 hour.
Step 2
Get it out, put in jars and stick in the fridge. Some people use steam the jars so they will preserve for the winter.
Step 3
P.S. I use a skilet with no oil on the top of the side burner on the outside grill to roast the eggplants and peppers.
