Ingredients
4 servings
2 x 140gcod fillets
cut into chunks
200graw prawns
2 Tbspolive oil
1white onion
small, finely chopped
2garlic cloves
minced
fresh ginger root
5cm piece, peeled and crushed
1mild chili
de-seeded and finely sliced
1carrot
peeled and sliced into rounds
4tomatoes
large, roughly chopped
2 tspground coriander
1 tsppaprika
1 tspcumin
100mlreduced-salt vegetable stock
or fish
20green olives
pitted
0.5lemon
juice of, plus lemon wedges, to serve
salt
pepper
to season
fresh coriander
chopped
Instructions
Step 1
Heat the oil in large non-stick pan. Add the onion, garlic and ginger and gently fry for 5 minutes. Add the chili, carrot and tomatoes and simmer gently for 10 minutes until the carrot is softened.
Step 2
Add the spices and cook for a further 3-4 minutes.
Step 3
Add the prawns, and cod before covering with the stock.
Step 4
Simmer gently for 6-7 minutes, then add the olives and season to taste with salt and lemon juice.
Step 5
Finally stir in a little coriander and sprinkle the rest over the top to serve. Delicious served with couscous.
