Ingredients
8 servings

4 cupsfrozen shredded hash browns
2 cupsprotein
breakfast meat, black beans or pinto beans

1 headbroccoli
small, diced into florets

½ cuponion
diced

1 x 10 ozcan Rotel
drained

1 cup2 % shredded cheddar cheese

6eggs

½ cupnonfat plain greek yogurt

½ cupmilk
unsweetened, of choice

½ tspsalt
Instructions
Step 1
Preheat the oven to 350°F and grease a 9” x 11” glass casserole dish.
Step 2
Spread the frozen hash browns out evenly in the dish, followed by meat/beans, broccoli, onion, drained Rotel and cheese.
Step 3
In a bowl, mix eggs, yogurt, milk and salt until well combined. Pour over top of the casserole dish. Do NOT stir.
Step 4
Cover with foil and bake for 30 minutes.
Step 5
Remove the foil and bake for an additional 25-30 minutes, or until eggs are completely cooked through.
