How to make healthy banana bread in the microwave in just four minutes. A recipe that uses no butter, no flour and only a small amount of sugar. Making it also great news for people who cannot eat gluten (if gluten-free oats are used).
What's more it takes just four minutes to cook and you can bake it in the microwave rather than the oven. No fancy baking tins or equipment is required as you can literally cook it in a microwave-safe lunch box.
One top tip before you start - try to use bananas that are well past their prime. We're talking spotty, mushy or even bananas that have turned black. The older the banana, the naturally sweeter the bread will be and you won't need to add additional sugar.

Instructions
Step 1
Blitz oats into a flour consistency and pour into a large bowl.
Step 2
Add all of the other ingredients and mix until smooth.
Step 3
Pour into a microwave-proof container.
Step 4
Top with sliced banana and microwave on high for four minutes.
Step 5
Pour onto a plate and sprinkle on some oats and sugar (optional).
