Instructions
Step 1
Soften onions in coconut oil then add garlic
Step 2
Add lamb and spice mix season
Step 3
Add tinned tomatoes and tomato purée and cook down
Step 4
Add coconut milk, chickpeas and stock cube
Step 5
Turn heat right down and cook for atleast one hour whilst the water reduces
Step 6
Check taste incase you need to season again. Just before the end, add spinach and let it cook a little
