Instructions

Step 1
Add the vegetable oil to a large frying pan or sauté pan once hot add in the cumin seeds and cook until the seeds begin to pop.
Step 2
Next, add the onions and green peppers
Step 3
Cook until onions are translucent then add in the Garlic and Ginger paste and cook for 1 minute.
Step 4
Next add in all the spices, the Methi, curry powder, garam masala, cumin powder, turmeric powder and the salt and stir well, next add in half of the tomato purée mixture and mix and allow the spices to cook, before the spices dry out to add in the rest of the tomato purée mixture and stir.
Step 5
Now add in the chicken and mix well ensuring the chicken is coated in all the sauce.
Step 6
Add in the coriander stalks and stir, and cook for 2 minutes.
Step 7
Now add in the smaller tomato pieces and cook for a further 2 minutes.
Step 8
Next, add in approximately 200ml of carrot and coriander soup and cook for 3 minutes, add in 100ml water and simmer for 5 minutes. Every minute or so stir and scrape the sides of the pan, as well as the base of the pan as the sauce, will caramelise on the pan.
Step 9
As the sauce thickens keep stirring and scraping. Now add in the chilli and fresh coriander and stir after 1 minute adds in the tomato 1/4’s stir and it’s ready to plate.
Step 10
Serve with Rice lick you’re lips and enjoy.
