Ingredients
4 servings
1 Tbspvegetable oil
1red onion
finely sliced
200gsnap peas
sliced lengthways
2peppers
deseeded and finely sliced, red and orange if possible
½ Tbspdried chilli flakes
300gwholegrain rice
300gcooked king prawns
227gpineapple in juice
can, drained and cut into chunks
3 Tbsplight soy sauce
½ tspfish sauce
coriander leaves
to garnish
lime wedges
to serve
Instructions
Step 1
Heat the oil in a large frying pan or wok over medium heat and fry the onion for 8min until softened. Add the mangetout and peppers, and fry for another 6 minutes, until nearly cooked through.
Step 2
Stir in the chili flakes (to taste), rice, prawns, pineapple chunks, soy sauce and fish sauce, then heat through thoroughly. Garnish with coriander and serve with lime wedges.
