For the Custard
Step 1
Mix the eggs, sea salt, cinnamon, brown sugar, nutmeg, and vanilla extract into a paste. Then, stream in the milk while mixing. Set aside.
For the Glaze
Step 2
Melt your butter in a sauce pan. Once melted, add the brown sugar, and whisk thoroughly while heating. Bring to a simmer while continuing to mix until you get a nice, consistent paste.
For the Casserole

Preheat the oven to 350° F
Step 4
Spread your glaze on the bottom of a greased 9" x 12" baking dish.
Step 5
Slice your Croissants in half lengthwise, and layer them in carefully.
Step 6
Pour on the custard, cover with aluminum foil, and let soak for 25-30 minutes, or up to overnight.
Step 7
Bake at 350° F for 30 minutes, keeping the foil on, then pull the foil off, and bake for another 15.
Step 8
Top with optional ingredients and serve.
