Step 1
In a bowl, whisk together the eggs, milk, sugar, vanilla, melted butter, cinnamon, and baking powder until well combined.

Step 2
For one croissant, dip 3 sheets of rice paper into the egg mixture, ensuring both sides are well coated.

Layer each rice paper piece on top of each other.
Step 4
Cut the rice paper to create a triangle in the middle.
Step 5
Place one cut side of the rice paper vertically on top of the triangle you created in the center.
Step 6
Place the other cut side of the rice paper horizontally on the top part (wide part/bottom) of the triangle.
Step 7
Roll towards the tip of the triangle.
Step 8
Place the rice paper croissant on baking sheet lined with parchment paper.
Step 9
Generously sprinkle some sugar on top of the rice paper croissant.

Bake at 350F for 30-35 mins or until it's golden.
