Instructions
Step 1
- roast the beets with salt, pepper, olive oil, some water, and thyme
- roast the walnuts with copious salt, pepper, and olive oil
- loose chop the thyme, mint, and dill
- slice peaches
- make the dressing with olive oil, salt, peppery, sherry vinegar, mustard powder, garlic, lemon, and shallot
- toss together and add leftover shallot to salad
