Instructions
Step 1
Heat the oil in a saucepan, add the onion and carrot and cook over a gentle heat for 5 mins until softened.
Step 2
Stir in garlic, courgette, chilli, thyme and smoked paprika and cook for 5 mins.
Step 3
Stir in the beans with their sauce, chickpeas, tomatoes and stock into the pan.
Step 4
Bring to the boil, then simmer for 10 mins until the vegetables are tender and the stew has thickened slightly.
Step 5
Serve hot.
