Instructions
Step 1
In a large pot - heat oil and cook onions, scallion & carrot for 2-3 minutes.
Step 2
Add potatoes, cannellini beans & seasoning. Break bay leaf in half. Pour in broth & bring to a boil, simmer until the potatoes are tender & stir in spinach.
Step 3
Remove bay leaf. Add alt & pepper to taste. I like to serve with a few croutons & some freshly grated Parmesan!
