Ingredients
4 servings
320gchicken breast mini fillets
diced
spring onions
finely sliced and separated into green and white parts
2garlic cloves
finely chopped
2 Tbspsunflower oil
300gbasmati rice
1 tspground cumin
1 tspcrushed chillies
750mlchicken stock
hot, made from a stock cube
1carrot
large, peeled and coarsely grated
250gfrozen garden peas
fresh coriander leaves
to garnish
Instructions
Step 1
Mix the chicken, white spring onions, garlic, oil, rice, cumin and chillies together in a large microwavable bowl, stirring until the rice is coated in oil. Pour over the hot stock then cover and microwave on high for 12 minutes, stirring halfway.
Step 2
Stir in the carrot, peas and green spring onions and cook for a further 3 minutes. Stir well, then leave to stand for 2 minutes until any remaining stock has been absorbed and the rice is tender.
Step 3
Garnish with coriander and serve.
