Instructions
Step 1
Make pork (up to 3 days ahead): Combine pork and marinade ingredients, refrigerate for up to 24 hours if desired.
Step 2
Sear pork in pressure cooker until browned. Add 1/2 cup water to pot, cook for 55 minutes on high pressure.
Step 3
Release, reserving 2 T cooking liquid. Heat broiler, toss pork with sauce and 1 to 2 T cooking liquid. Broil until crisped, 2 to 3 minutes.
Step 4
Make sauce (up to 7 days ahead): Warm oil over medium heat and sauté ginger and garlic until fragrant.
Step 5
Add remaining sauce ingredients and bring to a simmer. Cook until thickened, 1 to 2 minutes.
Step 6
Set sauce aside and refrigerate.
Step 7
Make cucumbers. Combine all ingredients and let sit at least 20 minutes.
Step 8
Serve over rice or on slider rolls, add kimchi if desired.
