Ingredients

1 teaspooncanola oil

1 x 16 ouncefrozen mixed vegetables
package, thawed

1 teaspoonminced garlic

½ teaspoonblack pepper

¾ teaspoondried thyme

2 cupsrotisserie chicken
chopped skinless, boneless

14.5 ouncesfat-free lower-sodium chicken broth

1can condensed cream of celery soup
undiluted, reduced-fat, reduced-sodium
1can condensed cream of mushroom soup reduced
undiluted reduced-fat - sodium

vegetable cooking spray

fresh thyme leaves
optional

7reduced-fat round buttery crackers
Instructions
Step 1
Preheat the broiler.
Step 2
Heat the oil in a large deep skillet over medium-high. Add the vegetables, garlic, pepper, and ½ teaspoon of the dried thyme; cook, stirring often, 3 minutes. Add the chicken and next 3 ingredients. Bring to a boil; reduce the heat, and simmer, stirring occasionally, until thoroughly heated and the flavors blend, 8 to 10 minutes.
Step 3
Meanwhile, coat the crackers with cooking spray; place on a baking sheet. Sprinkle the crackers with the remaining ¼ teaspoon dried thyme. Broil 6 inches from the heat until browned, about 1 minute. Remove from the oven. Ladle the soup into bowls, and top with the crackers. Garnish with the fresh thyme, if desired.
