Simple Shrimp (Chicken) Scampi [HMC]

2 steps
Prep:10minCook:15min
A lot of people think "simple" and "scampi" couldn't possibly go together, but I'm here to say that isn't the case. Scampi is simply an Italian style of cooking a big mama of a shrimp doused with olive oil, garlic, and a splash of white wine. That's pretty simple in my book. The only thing you really need to do is keep a sharp eye on the stove, because once the garlic hits the pan it cooks mighty fast (as do the shrimp; 3 minutes is all it takes). As a brain booster, shrimp's B12 can't be beat, and the anti-inflammatory benefits of garlic are superb.

Instructions

Step 1
Heat the olive oil in a heavy skillet over medium heat. Add the garlic and red pepper flakes and saute for 30 seconds, until the garlic is fragrant and slightly golden. Add 1/4 cup of the wine and deglaze the pan, scraping any bits that are stuck to the pan, and cook until the liquid has reduced by half. Add the chicken, a pinch of salt, and the remaining wine. Cook until the chicken is opaque, about 3 minutes. Gently stir in the lemon zest, 2 tablespoons of lemon juice, and parsley. Taste; you may want to add another pinch of salt and a squeeze of lemon juice. Serve immediately.

Storage

Step 2
Store in an airtight container in the fridge for 2 days. Calories: 178 per serving.
