Step 1
Preheat oven to 325°F degrees. Grease a 12-cup muffin tin with coconut oil. Press 1/4 cup of shredded sweet potato firmly into each muffin cup; forming a nest up the sides. Crack 1 egg into each sweet potato nest. Sprinkle in fresh herbs and season with sea salt and pepper if you like. Bake for 20-25 minutes, until the eggs are done to your liking (20 minutes = softer yolk, 25 minutes = firm yolk).
