Prosciutto and Peas Tortellini

Instructions

Step 1
Bring a pot of salted water to a boil
Step 2
In a saucepan over medium heat add the olive oil, garlic and prosciutto and cook until the prosciutto is crispy- about 5 minutes.
Step 3
Add in the salt and pepper, roasted red peppers, cream and cheese. Stir until the cheese is melted.
Step 4
Meanwhile, Add the tortellini to the boiling water and cook 2 minutes. Add the peas and cook another minute. This should only take 3-4 minutes total, the tortellini cooks very fast.
Step 5
Reserve some of the pasta water in case you need to thin the sauce later and drain the tortellini with peas and add it to the cheese sauce. Mix together, add some pasta water if it seems too thick. Season with more salt and pepper to taste.
