Instructions

Step 1
In a medium bowl, combine the mushrooms, oil, and vinegar, and toss to coat the mushrooms well. Working in batches if needed, place the mushrooms in the air fryer basket in a single layer. Cook at 380*f until tender, about 5 minutes, shaking the basket halfway through. Transfer the mushrooms to a cutting board and let cool before finely chopping them.
Step 2
In a large bowl, combine the chopped mushrooms, beef, salt, pepper, onion powder, garlic powder, and thyme, and mix gently. Divide the beef/mushroom mixture evenly into 4 portions and gently shape each into a ball. Use your fingers to press a well into the center of each ball and add one-quarter of the Gouda cheese and 1/2 tablespoons of the diced pickles to each well. Close the well to seal the cheese and pickles inside. Press each ball into a patty about 3 1/2 inches in diameter and about 3/4 inch thick.
Step 3
Working in batches if needed, place the Pattie’s in the air fryer basket in a single layer. Cook at 370*f until the burgers are cooked to medium doneness and the cheese is melted. 9-11 minutes, flipping halfway through
