Congee ingredients
Instructions
Making the Congee
Step 1
Rinse rice throughly then add water to pot with rice
Step 2
Rinse chicken then add to pot
Step 3
Add ginger and yellow onion
Step 4
Once simmer, turn heat to medium low and occasionally stir so the rice doesn’t get stuck to the bottom of pot
Step 5
Cover with lid, after about an hour, remove chicken and shred chicken
Step 6
Add shredded chicken back to pot
Step 7
Remove and discard yellow onion and ginger
Step 8
If you like the Congee a bit thinner then add more water
Step 9
Season the Congee with a few rock sugar if you have it. If not, add regular sugar, fish sauce and salt or chicken bouillon powder. Adjust to taste

Garnish with chopped Scallions & Cilantro
Step 11
For extra flavor, sprinkle some fried minced garlic, Sambal Chili and serve with Dau Cháo Qủay - Chinese Donuts
