1 poundshrimp
peeled and deveined, raw, medium, chopped
1 ⅓ cupwhole wheat panko bread crumbs
divided
⅔ cupgreen bell pepper
finely diced
½ cupyellow onion
finely diced
¼ cupfresh cilantro
chopped
4 teaspoonsfresh lime juice
2 teaspoonsfish sauce
2 teaspoonsthai sweet chili sauce
2eggs
large, lightly beaten
2garlic cloves
minced
2 tablespoonsolive oil
divided
Instructions
Step 1
1. Combine shrimp, 2/3 cup panko, bell pepper, onion, cilantro, lime juice, fish sauce, chili sauce, eggs and garlic in a medium bowl
Step 2
2. Shape mixture into a patties and dredge and remaining 2/3 cup panko
Step 3
3. Heat 1 tablespoon oil in a large nonstick skillet over medium high heat. Add 4 shrimp patties to the skillet and cook until crispy and well browned, about 4 minutes per side
Step 4
4. Repeat procedure with remaining one tablespoon oil and remaining 4 shrimp patties
