Clean the pumpkin, and cut it in smal cubes.

Clean the chicory and mince it.

Put the pumpkin, chicory into a large bowl. Add the garlic, some salt, pepper, nutmeg, grated parmesan and a handful of breadcrumbs.
Add the ricotta and the eggs too and mix gently for a minute.

Put some parchment paper in a baking dish and ease down the puff pastry on it.

Poor the mixture with all our ingredients on the puff pastry and spread it.

Bake the quiche for about 30 minutes in the oven. The baking time might be different depending on the puff pastry, the oven or the baking dish you are using. When the quiche is done, you should see the puff pastry getting a little brown and crispy.
