Instructions

Step 1
Pre heat your oven to 400* F

Step 2
Chop vegetables in 1 inch cubes. Do not chop vegetables thin or they will burn.
Step 3
Chop chicken into 1 inch cubes.
Step 4
Place vegetables and chicken onto a baking sheet and spray with oil or non stick spray.
Step 5
Generously season and give it a good mix. Make sure there is one layer to ensure everything cooks evenly.
Step 6
Toss the sheet pan in the oven for 20 minutes or until chicken is cooked through.
Step 7
While the chicken and vegetables are cooking cook the mini potatoes according to the directions. I follow the microwave directions to save time.
Step 8
Serve each bowl with around 7 ounces of chicken & vegetable mix, 1 ounce potatoes, & .5 ounce Parmesan cheese.
