1 TMetamucil
1 Tchickpea flour
2 TRice Starch
1 tspbaking powder
1 tspbaking soda
¼ tspsalt
2 Tcoconut oil
¾ cupunsweetened applesauce
¾ cupunsweetened vanilla almond milk
¼ cupgranulated erythritol
1 Tgranulated sugar

Instructions
Step 1
Preheat the oven to 350 degrees and spray 9x13 cake pan with cooking spray.
Step 2
In a small bowl, whisk together the flours, fiber, starch, baking powder, baking soda, and salt.
Step 3
In a large bowl, whisk together the applesauce, almond milk, erythritol, eggs, stevia extract, butter, vanilla, and turmeric. Whisk until completely even.
Step 4
Dump the dry ingredients into the wet ingredients and whisk until smooth.
Step 5
Lastly, whisk in the vinegar.
Step 6
Pour the batter in the pan and bake for ~20-25 minutes, or until the surface of the cake is firm and springs back when tapped. Let cool completely.
